Fava Bean Salad

(see Jack o' Lantern Bento)

5 fava bean pods (take out the beans)
3 green olives, chopped
1/2 tsp mirin
1/4 tsp rice vinegar


Toss the fava beans and olives together. Whisk the mirin and vinegar together in a very small bowl ( when I say very, I mean VERY). Toss the veggies and the dressing together. The salad is now ready to be put into your bento. Oh, BEWARE - When putting salads or anything that is moist in your bento, don't put it straight in. It is best to use wax coated dividers or a silicon cup. If you don't divide it, it will make everything else in the bento soggy.
